A Cinco de Mayo fiesta of flavor

What better way to celebrate Cinco de Mayo than with a flavorful fiesta of authentic Mexican cuisine! These simple, satisfying chicken tacos make an excellent main dish, while the creamy caramel flan is sure to hit your sweet spot. Serve with Fanta® or ice-cold Coca-Cola® to complete your full-flavored Mexican meal.

Taquitos de Pollo
You'll need:
8 corn or flour tortillas
2 cooked and shredded chicken breasts
2 cooked ears of corn
1 red onion, chopped
2 jalapeños, chopped
½ cup cooked black beans
cilantro leaves, chopped
¼ cup of olive oil
salt and pepper
2 tablespoons of white vinegar
2 lbs of lettuce, shredded

Shuck your cooked corn and mix with jalapeños, onion, black beans and cilantro in a medium sized bowl. Add the vinegar and olive oil, season with salt and pepper, and mix well. Assemble your tacos with the chicken, lettuce and corn mixture. If you prefer crunchy tacos, use corn taco shells rather than tortillas.

Flan
You'll need:
2 ¼ cups milk
1 cup condensed milk (or fresh caramel)
4 eggs
½ cup of sugar
Whipped cream for serving

In a nonstick saucepan, heat the sugar over medium heat until it takes on a golden brown color. Pour the caramelized sugar into your ramekin or flan mold. In another saucepan, combine the milk with the condensed milk (or fresh caramel), heat and mix well until smooth. On the side, beat the 4 eggs. Add the hot milk mixture to the eggs, stirring well. Pour the mixture in the mold, and place mold in a bain marie (or pan filled with about an inch of hot water). Bake it in the oven at 215° for about 50 minutes or until the flan is firm. Let it cool before removing it from the mold. Serve with whipped cream.
